Ingredients
- 5 eggs
- 4 cups of milk
- 1 teaspoon table salt
- 4 1/2 lb. rock salt
- 26 pounds of crushed ice
- 1 ½ cups of sugar or sweetener
- 4 teaspoons of vanilla essence
- 5 tablespoons of all purpose flour
- 3 cups of heavy whipping cream and light cream, equal parts
Preparation
- In a heavy sauce pan, combine the sugar, flour and table salt.
- Separately, in a medium-sized bowl, beat eggs until well mixed, by hand.
- Add this mixture to the dry ingredients and stir together.
- Cook over low heat, stirring constantly, for about 30 or 40 minutes. Once the mixture thickens and coats the spoon, remove from heat. Make sure the mixture doesn’t come to a boil.
- Cover the surface with waxed paper and refrigerate for 2 hours.
- Pour the mixture of heavy and light creams, vanilla extract and the cooled egg mixture into the ice cream maker.
- Place the beater in the bowl and then the cover.
- Attach the motor or crank to the lid (this will depend on whether your ice cream maker is electric or manual).
- Fill the cube halfway with ice and then sprinkle with rock salt. Repeat up to 1 inch from the edge.
- Beat the mixture, adding more ice and salt if necessary.
- Remove the motor or crank, lid and beater.
- With the help of a spoon, push down on the ice cream and cover the container with waxed paper.
- Place a piece of cork in the center hole.
- Add more ice and salt. Allow to set for 3 or 4 hours until the ice cream becomes firm.
- The recipe provides approximately 13 servings.
Pistachio ice cream
Ingredients
- 3 eggs
- 1 cup of sugar
- ½ tablespoon of salt
- 2 ½ cups of milk
- Green food coloring
- Almond extract
- 2 cups of heavy and light cream combines
- 3 tablespoons of flour
Preparation
- Prepare the egg cream as indicated above in the vanilla ice cream recipe instructions.
- Cook for approximately 15 minutes and then beat for 20 minutes.
- Add 1 ½ cups of salted pistachios in thick pieces through the opening.
- Stir well by inserting a long handled wooden spoon through the opening. Replace the lid and finish preparing the ice cream.

Ingredients
- 3 eggs
- Lemon juice
- 1 cup of sugar

- A pinch of cinnamon

- 3 tablespoons of flour
Preparation
- Prepare the egg cream as indicated above in the vanilla ice cream recipe instructions and beat for 15 minutes.
- While the mixture is cooking, chop the bananas and place them in a blender along with one tablespoon of lemon juice.
- Add the sugar and cinnamon, cover the blender, and beat until you have a smooth mixture.
- Combine the banana mixture with the egg mixture and the combined creams. Beat well until you have a homogenous mix.
- Pour into a mold and freeze. Makes approximately 6 portions.
Passion fruit ice cream
Ingredients
- 1/2 cup of sugar
- ½ cup of water
- 1 can of whipping cream
- 1 can of evaporated milk
- The pulp of 5 passion fruits
- 1/4 cups grated chocolate
Preparation
- Place the evaporated milk in the freezer the night before
- Pour the pulp and water into the blender
- Blend for a short time and strain the seeds. Place the passion fruit juice in the blender with the frozen evaporated milk, cream and sugar.
- Blend on maximum speed until the ingredients are well mixed – approximately 5 minutes.
- Pour into individual molds and refrigerate for 4 hours.
- Decorate with chocolate shavings. Makes approximately 4 portions.
