1. Meatballs in vegetable sauce

Ingredients

  • 5 oz of minced meat
  • 2 eggs
  • 2 onions or chives
  • 4 tablespoons of breadcrumbs
  • ½ glass of milk
  • 1 clove of garlic
  • Flour
  • Oil
  • Salt

Sauce:

  • 18 oz of onions
  • 1 carrot
  • 2 cloves of garlic
  • 1 tablespoon of flour
  • 1 glass of white wine
  • 2 tomatoes
  • Oil
  • Salt

Vegetable garnish:

  • 4 oz of raw peas
  • 1 diced and cooked carrot
  • 8 oz of sautéed mushrooms

How to make it

  • Chop the garlic and onion, and then mix them with the meat
  • Add the eggs, breadcrumbs, milk and a pinch of salt, and mix well
  • Take small amounts in your hand and then start making them into small balls
  • Dust the meatballs with flour and fry them in the oil
  • When they’re cooked, remove the meatballs and drain them for 5 minutes on absorbent paper
  • To make the sauce, cut the vegetables into pieces and then season them in a pot with a little oil
  • Let them simmer until their colors change
  • Add the flour and, if necessary, some broth
  • Then add some wine
  • Let it cook for about 30 minutes over a low heat
  • Finally, add the meatballs to the sauce, along with the garnish and cook for about 6 minutes

2. Recipes for diabetic children: Chicken wing skewer kebabs

Ingredients

  • 16 chicken wings
  • 4 small tomatoes
  • 4 green peppers for frying
  • Around 4 small mushrooms
  • 4 strips of red pepper
  • 4 oz of flour
  • 8 tablespoons of olive oil
  • 1 teaspoon soy sauce
  • Salt

How to make it

  • Make four skewers with the chicken wings, tomatoes, green peppers, mushrooms and red peppers
  • Before cooking, add some salt to taste and a little oil
  • Then cook them wherever it’s most convenient: on a barbecue, a grill pan, or something similar
  • Then sprinkle the chicken wings with flour and fry them with a little soy sauce

3. Tuna pizza with vegetables

Ingredients

  • A pizza base for 4 people
  • 8 oz of tomato sauce
  • 8 oz grams of tuna
  • 6 oz of zucchini
  • 4 oz grams of green peppers
  • 6 oz grams of red pepper
  • 2 oz grams of onion
  • 4-6 oz of mozzarella cheese

How to make it

  • Spread the tomato sauce on the pizza base

Ingredients

  • 9 oz of rice
  • 12 oz of minced meat
  • 1 scallion (green onion)
  • 3 tomatoes
  • 2 cloves of garlic
  • A few sprigs of parsley

  • Salt
  • A pinch of black pepper
  • 1/2 tablespoon of grated Parmesan cheese
  • 2 tablespoons of butter
  • 2 tablespoons of olive oil

How to make it

  • Season the meat with salt and pepper, and then place it in the fridge for 25 minutes
  • After that, sauté it in butter, garlic and onion chopped into small pieces
  • After a couple of minutes, add the minced meat and then stir it in a pan over a low heat, until it turns a golden color
  • Cut the tomatoes into small pieces and then add them to the meat, as well as basil and parsley
  • Cook it over a medium heat, stirring continuously
  • When the meat is ready, add the rice, and stir it into the cooked meat
  • Sauté the rice with the meat for a while, and then add water (2 oz of water for each ounce of rice)
  • Let it cook for 25 minutes over a low heat
  • When it’s fully cooked, serve it with some grated cheese on top
