Ingredients

  • 5 eggs
  • 4 cups of milk
  • 1 teaspoon table salt
  • 4 1/2 lb. rock salt
  • 26 pounds of crushed ice
  • 1 ½ cups of sugar or sweetener
  • 4 teaspoons of vanilla essence
  • 5 tablespoons of all purpose flour
  • 3 cups of heavy whipping cream and light cream, equal parts

Preparation

  1. In a heavy sauce pan, combine the sugar, flour and table salt.
  2. Separately, in a medium-sized bowl, beat eggs until well mixed, by hand.
  3. Add this mixture to the dry ingredients and stir together.
  4. Cook over low heat, stirring constantly, for about 30 or 40 minutes. Once the mixture thickens and coats the spoon, remove from heat. Make sure the mixture doesn’t come to a boil.
  5. Cover the surface with waxed paper and refrigerate for 2 hours.
  6. Pour the mixture of heavy and light creams, vanilla extract and the cooled egg mixture into the ice cream maker.
  7. Place the beater in the bowl and then the cover.
  8. Attach the motor or crank to the lid (this will depend on whether your ice cream maker is electric or manual).
  9. Fill the cube halfway with ice and then sprinkle with rock salt. Repeat up to 1 inch from the edge.
  10. Beat the mixture, adding more ice and salt if necessary.
  11. Remove the motor or crank, lid and beater.
  12. With the help of a spoon, push down on the ice cream and cover the container with waxed paper.
  13. Place a piece of cork in the center hole.
  14. Add more ice and salt. Allow to set for 3 or 4 hours until the ice cream becomes firm.
  15. The recipe provides approximately 13 servings.

Ingredients

  • 3 eggs
  • 1 cup of sugar
  • ½ tablespoon of salt

  • Green food coloring
  • Almond extract

Preparation

  • 3 tablespoons of flour

Preparation

  2. While the mixture is cooking, chop the bananas and place them in a blender along with one tablespoon of lemon juice.
  3. Add the sugar and cinnamon, cover the blender, and beat until you have a smooth mixture.
  4. Combine the banana mixture with the egg mixture and the combined creams. Beat well until you have a homogenous mix.
  5. Pour into a mold and freeze. Makes approximately 6 portions.

Passion fruit ice cream

Ingredients

  • 1/2 cup of sugar
  • ½ cup of water
  • 1 can of whipping cream
  • 1 can of evaporated milk
  • The pulp of 5 passion fruits
  • 1/4 cups grated chocolate

Preparation

  1. Place the evaporated milk in the freezer the night before
  2. Pour the pulp and water into the blender
  3. Blend for a short time and strain the seeds. Place the passion fruit juice in the blender with the frozen evaporated milk, cream and sugar.
  4. Blend on maximum speed until the ingredients are well mixed – approximately 5 minutes.
  5. Pour into individual molds and refrigerate for 4 hours.
  6. Decorate with chocolate shavings. Makes approximately 4 portions.
