Authentic Sacher Torte Cake Recipe

Ingredients for making your Sacher-Torte cake
If you want to prepare an exquisite Sacher-Torte cake, you’ll need the following ingredients:
- 8 tablespoons of butter
- 7/8 cup powdered sugar
- 1/2 cup of sugar
- 3/4 cup of whole almonds
- 6 eggs
- 5 ounces of chocolate
- 1/2 cup of flour
- 2 teaspoons of baking powder
- Apricot jam
For the glaze you will need the following items:
- 4 1/4 cups of cream
- 5 ounces of chocolate, with 55% cocoa
- 2 tablespoons of butter
First, the almonds will have to be toasted. To do this, you can simply put them in the oven for 15 minutes at 300 degrees Fahrenheit. As soon as you remove them from the over, crush them and set them aside for later.
Next, melt the chocolate in the microwave or in a bain-marie, but always be careful not to burn it.
The next step is to mix the butter with the icing sugar, with the help of a mixer.
At the same time, separate the egg whites from the yolks and beat them with the granulated sugar until peaks are formed.
At this point, add the yolks one by one to the mixture of butter and icing sugar. Stir well with a whisk and add the almonds, mixing everything again. Then, mix the melted chocolate with the egg whites and added to the previous preparation.
To continue, you’ll have to sift the flour together with the baking powder and add it little by little to the mixture.
To cook the sponge cake, you’ll need to start by greasing a mold with butter and flour. Right after, the mixture is poured and baked at 325 degrees for 25 or 30 minutes. Before removing, you have to prick in the center to check that the knife comes out clean.
Let cool and cut in half. Place a thin layer of jam and cover the cake again.
All that remains is to finish off with the icing. To do this, chop the chocolate and boil the cream. At this point, add the chocolate to the cream, already off the heat, and mix well. Finally, add the butter and leave it to cool for 10 minutes.
Bath the cake and place it in the fridge for an hour before serving.
